Lemon and herb lamb skewers recipe

Delicious tender lemon herb lamb skewers paired with a fresh green salad for a simple and delightful weeknight meal.
Ingredients:
  • 750g Lamb Leg Steaks, cut into 2cm pieces
  • 2 tsp dried mixed herbs
  • 60ml olive oil
  • 60ml lemon juice
  • 150g pkt Australian Superfood salad Leaf Blend
Instructions:
  • In a large bowl, mix the lamb with the herbs, half of the oil, and half of the lemon juice. Season with salt and pepper. Let it sit for 10 minutes to enhance the flavors.
  • Preheat a barbecue grill or chargrill on high heat. Skewer the lamb onto 12 metal or soaked bamboo skewers evenly. Grill for 6 mins for medium or to your desired doneness, turning occasionally. Place on a plate, cover with foil, and let it rest for 5 mins before serving.
  • In a small bowl, mix the leftover oil and lemon juice together. Then portion out the skewers and salad leaves onto individual serving plates. Finish by drizzling the oil mixture over the plates before serving.
