Mediterranean chicken with olives, onions, tomatoes, and herbs for a flavorful and satisfying meal.
Ingredients:
  • 2 tablespoons white wine
  • 2 teaspoons olive oil
  • 6 skinless, boneless chicken breast halves
  • 3 cloves garlic, minced
  • 0.5 cup diced onion
  • 3 cups tomatoes, chopped
  • 0.5 cup white wine
  • 2 teaspoons chopped fresh thyme
  • 0.5 cup kalamata olives
  • 0.25 cup chopped fresh parsley
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium heat, warm the white wine and oil until shimmering. Add the chicken and sear until beautifully golden on each side, about 4 to 6 minutes per side. Transfer the chicken to a plate and keep warm.
  • Sauté garlic in pan drippings for 30 seconds, then add onion and cook until tender, about 3 minutes. Stir in tomatoes and bring to a boil. Reduce heat, pour in 1/2 cup of white wine, and simmer for 10 minutes. Lastly, add thyme and basil and continue to simmer for 5 more minutes.
  • Add the chicken back to the skillet, cover, and gently cook until it is fully cooked and no longer pink inside. Stir in olives and parsley, cook for 1 minute. Finally, season with salt and pepper before serving.
