Ingredients:
  • 18.20 gm olive oil
  • 4 chicken breast fillets, sliced in half (sideways) into 8 thin fillets
  • 1 garlic clove, crushed
  • 1 small red chilli, seeds removed, finely chopped
  • 400g btl Mutti Tomato Passata
  • 20.00 ml baby capers, rinsed
  • 82.50 ml small pitted black olives
  • 20.00 ml chopped flat-leaf parsley
  • 100g low-fat feta, crumbled
  • Steamed green vegetables (such as broccolini), to serve
Instructions:
  • Preheat the oven to 180°C for a perfect bake.
  • In a large frypan over high heat, sear the chicken in hot oil, seasoning with salt and pepper. Brown each side for 1-2 minutes. Then, transfer the chicken to a baking tray and bake in the oven for 5 minutes.
  • Return the pan to medium heat, and sauté garlic and chili for 1 minute. Pour in passata and cook for 3-4 minutes. Add capers, olives, and parsley, season with salt and pepper, and cook for an additional minute. Serve by placing a chicken fillet on each plate, topping with a sprinkle of feta, and then adding the remaining chicken.
  • Drizzle sauce over the dish, sprinkle with the rest of the feta, and enjoy with steamed vegetables.
