Roasted garlic lemon potatoes - a simple and flavorful side for any night.
Ingredients:
  • 5 large russet potatoes, scrubbed and quartered
  • 3 cloves garlic, minced
  • 1 pinch sea salt and ground black pepper to taste
  • 1 cup water
  • 0.5 cup olive oil
  • 0.25 cup lemon juice
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Spread the potatoes in a 9x13-inch baking dish and generously season with garlic, sea salt, and pepper. Drizzle with water, oil, and lemon juice, then toss briefly with a wooden spoon to ensure even coating.
  • Roast in the preheated oven for 40 minutes, then turn the potatoes and cook for an additional 25 minutes until golden brown on all sides.
