Smoked Pork Chops with Tex-Mex Cornbread Stuffing

Elevate cornbread stuffing with onions, corn, and cheese for a tasty side to pair with smoked pork chops.
Ingredients:
  • 1/4 cup butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 4 1/2 cups cornbread stuffing crumbs (from 16-oz bag)
  • 1 1/2 cups water
  • 1 can (11 oz) whole kernel corn with red and green peppers, drained
  • 4 oz pepper Jack cheese, cut into 1/4-inch cubes
  • 8 boneless smoked pork chops, 1 inch thick (4 oz each)
Instructions:
  • Preheat oven to 350°F. In a 10-inch skillet over medium-high heat, melt butter. Sauté onion for 2 to 3 minutes until tender, stirring frequently.
  • Combine stuffing, onion mixture, water, and corn in a large bowl until stuffing is moistened, then fold in the cheese.
  • Spread the stuffing mixture into a 13x9-inch pan. Place the pork on top of the stuffing. Cover the pan with foil and bake for 40 to 45 minutes, or until the cheese is melted and a meat thermometer inserted into the center of the pork reads 160°F.
