Apple and Sweet Potato Matzo Bake

Try this delectable make-ahead Passover matzo bake with apples and sweet potatoes as the perfect side dish for your dinner!
Ingredients:
  • 6 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups hot water
  • 6 sheets (6 ounces) matzo crackers, broken into 1-inch pieces
  • 1 1/2 pounds sweet potatoes, peeled and sliced into 1/8-inch-thick rounds
  • 2 large Fuji or gala apples, peeled, quartered, cored, and sliced into 1/4-inch-thick slices
  • 1 teaspoon cinnamon
  • 2 tablespoons margarine
Instructions:
  • Preheat your oven to 325°F and generously grease a 9x13 baking dish with margarine, olive oil, or grapeseed oil.
  • For a perfect blend of flavors, whisk eggs with salt and pepper until smooth. Then, in a bowl, pour hot water over matzo crackers, allowing them to soak briefly before draining excess water.
  • Pour the flavorful egg mixture evenly over the matzo, gently folding to ensure each piece is coated without breaking or mushing them.
  • Create layers with the potatoes and apples: Begin by arranging half of the sweet potato slices evenly in the baking dish. Next, layer half of the apple slices on top of the sweet potatoes followed by a sprinkle of 1/2 teaspoon of cinnamon over the apples. Spread half of the matzo/egg mixture over the apples evenly. Repeat the layers of sweet potato, apple, cinnamon, and matzo/egg mixture once more. Cover the dish with aluminum foil, ensuring it does not touch the matzo.
  • After baking the casserole covered for 1 hour, uncover and test the sweet potatoes' tenderness with a paring knife. If needed, bake for an additional 10 minutes until they are soft. Then, dot the top with margarine and bake uncovered for 5 more minutes until the margarine melts and the matzo browns lightly.
  • Once baked, allow the matzo to rest for 15 minutes before slicing and serving warm.
