Sweet potato and apple bake with brown sugar and raisin topping, perfect for Thanksgiving and Christmas.
Ingredients:
  • 3 sweet potatoes, peeled and cubed
  • 2 Granny Smith apples - peeled, cored and sliced
  • 0.5 cup packed brown sugar
  • 0.5 cup water
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup raisins
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 slices lemon, thinly sliced
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 2 quart casserole dish.
  • Layer the sweet potatoes and apples in the casserole dish in an alternating fashion.
  • Combine brown sugar, 1/3 cup water, cinnamon, raisins, butter, and salt in a medium saucepan over medium heat. Cook for 5 minutes.
  • Combine the remaining water and flour in a small bowl, then mix it with the brown sugar mixture. Pour this over the sweet potatoes and apples, and top with lemon slices.
  • After 20 minutes in the preheated oven, uncover and bake for an additional 20 minutes, or until the sweet potatoes and apples are tender.
