Thanksgiving yams and apples baked with a sweet glaze - a delicious holiday treat!
Ingredients:
  • 4 large yams
  • 3 tablespoons butter
  • 1 tablespoon cornstarch
  • 0.5 cup packed brown sugar
  • 1.5 cups apple juice
  • 1 tablespoon lemon juice
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 3 large apples - peeled, cored and sliced
Instructions:
  • In a large saucepan, cover the yams with water and bring to a boil. Cook for 30 minutes, or until the yams are tender but still firm. Drain, peel, and slice into 1/3 inch thick pieces.
  • Preheat your oven to 375 degrees F (190 degrees C) and gently grease a 9x13 inch baking dish.
  • Combine butter, cornstarch, and brown sugar in a small saucepan over medium heat until melted. Stir in apple juice, lemon juice, cinnamon, and allspice.
  • Layer the yams and apples in the baking dish, then generously drizzle the apple juice mixture over them.
  • Bake with cover on for 1 hour in the preheated oven. Uncover and bake for another 30 minutes, basting with pan juices frequently to keep it moist.
