Cozy vegetarian sweet potato and apple soup with Chinese 5-spice for a warm fall meal.
Ingredients:
  • 6 cups vegetable broth
  • 1 tablespoon vegetable oil
  • 0.5 onion, chopped
  • 2 stalks celery, chopped
  • 1.5 teaspoons Chinese 5-spice powder
  • 4 sweet potatoes, chopped
  • 2 apples - peeled, cored, and cubed
  • 1.5 teaspoons salt
Instructions:
  • In a pot, bring the vegetable broth to a boil.
  • In a skillet, sauté onion and celery in oil over medium heat until tender, about 5-10 minutes. Stir in Chinese 5-spice powder, cook until fragrant, about 1 minute.
  • Combine sweet potatoes, apples, salt, and onions in broth; simmer until sweet potatoes are fork-tender, about 20-25 minutes. Let soup cool for at least 5 minutes before serving.
  • Carefully transfer the soup into the blender, making sure it is no more than half full. Secure the lid and pulse a few times before blending until smooth in batches.
