Celebrate fall with quick and delicious pumpkin spice cookies using Betty Crocker's yellow cake mix and vanilla frosting. Ready in just over an hour!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 2 teaspoons pumpkin pie spice
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/4 cup butter or margarine, softened
  • 1/2 cup raisins, if desired
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
Instructions:
  • Preheat oven to 375°F (350°F for dark or nonstick pans) and lightly grease or spray a cookie sheet.
  • Combine the cake mix, pumpkin pie spice, pumpkin, and butter in a large bowl. Use an electric mixer on low speed to mix for about 1 minute. Add in the raisins and stir until well incorporated.
  • Spoon generous tablespoonfuls of dough onto a cookie sheet, spacing them 2 inches apart.
  • Bake for 10 to 13 minutes until lightly golden brown at the edges. Allow to cool for 1 to 2 minutes, then transfer to a cooling rack. Let cool completely for about 30 minutes before frosting and storing loosely covered.
