Easy vegan pumpkin spice cookies with almond milk, pumpkin, and oil for a quick holiday treat.
Ingredients:
  • 2 cups all-purpose flour
  • 1 (15 ounce) can pumpkin puree
  • 1.3333333730698 cups white sugar
  • 0.33333334326744 cup vanilla-flavored almond milk
  • 0.25 cup vegetable oil
  • 1 teaspoon baking soda
  • 0.5 teaspoon cinnamon sugar
Instructions:
  • Preheat the oven to a toasty 400°F (200°C).
  • Combine flour, pumpkin purée, sugar, almond milk, vegetable oil, baking soda, cinnamon, vanilla, salt, and cinnamon sugar in a bowl to form a smooth dough. Use 1 tablespoon of dough per cookie and spoon onto a baking sheet.
  • Bake in the preheated oven for 10-12 minutes until edges are starting to crisp. Let cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
