Overnight vegan pumpkin oats - simply toss all ingredients into the slow cooker before bed for a fuss-free breakfast ready when you wake up!
Ingredients:
  • 2.5 cups water
  • 1 cup steel-cut oats
  • 1 cup almond milk
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 0.25 teaspoon salt
Instructions:
  • In a slow cooker, mix together water, steel-cut oats, almond milk, pumpkin puree, vanilla extract, pumpkin pie spice, and salt.
  • Slow cook for 8 hours.
