Vegan pumpkin quick bread made with whole wheat flour and applesauce for a moist and dense treat.
Ingredients:
  • 2 tablespoons flax seed meal
  • 6 tablespoons water
  • 1.5 cups sugar
  • 1 cup canned pumpkin puree
  • 0.5 cup applesauce
  • 1.3333333730698 cups all-purpose flour
  • 0.33333334326744 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.75 teaspoon salt
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x5 inch loaf pan.
  • Combine flax seed meal and water, then add sugar, pumpkin, and applesauce, mixing well.
  • Combine all-purpose flour, whole wheat flour, baking soda, cinnamon, salt, baking powder, nutmeg, and cloves in a large bowl. Mix in the dry ingredients with the pumpkin mixture until smooth, then transfer the batter into the prepared pan.
  • Bake in a preheated oven for 65-70 minutes or until a toothpick inserted into the center of the loaf comes out clean.
