Wholesome pumpkin apple walnut bread with whole wheat flour and flax seeds.
Ingredients:
  • 1 cup all-purpose flour
  • 0.75 cup whole wheat flour
  • 1.25 cups sugar
  • 1.5 teaspoons Spice Islands® Pumpkin Pie Spice
  • 0.25 teaspoon Argo® Baking Powder
  • 1 cup canned pumpkin
  • 1 apple, cored and shredded
  • 0.33333334326744 cup Mazola® Corn Oil
  • 1 teaspoon Spice Islands® Pure Vanilla Extract
  • 0.5 cup dried cranberries*
  • 2 tablespoons flax seed
Instructions:
  • 1. Preheat your oven to 375 degrees F. Combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking soda, salt, and baking powder in a medium bowl. In a separate large bowl, whisk together pumpkin, apple, oil, egg, and vanilla. Add the dry ingredients to the wet ingredients, mixing just until moistened. Stir in cranberries and flax seed. Portion the batter into greased muffin cups or use paper liners. Sprinkle the tops with walnuts.
  • Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan on a wire rack for 5 minutes before removing from the pan.
