Fall-inspired coffee cake with apple, pumpkin, and streusel topping.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 cups white sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 0.5 cup vegetable oil
  • 2 cups peeled and chopped apples
  • 0.25 cup white sugar
  • 0.5 teaspoon ground cinnamon
  • 4 teaspoons cold unsalted butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9x13-inch baking pan.
  • In a large bowl, blend together flour, white sugar, cinnamon, baking soda, nutmeg, salt, ginger, and cloves for the cake.
  • In a medium bowl, mix together pumpkin, oil, and eggs. Add the mixture to the dry ingredients and stir until just moistened. Gently fold in the apples, then spoon the batter into the prepared pan.
  • In a small bowl, mix together sugar, flour, and cinnamon for the topping. Add butter and blend until crumbly, then sprinkle over the batter.
  • Bake in the oven until a toothpick comes out clean, about 35-40 minutes.
