Indulge in delicious pumpkin-apple bread with cozy fall flavors, perfect for breakfast or a delightful afternoon treat!
Ingredients:
  • cooking spray
  • 1.75 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 2 large eggs
  • 0.5 cup white sugar
  • 0.5 cup light brown sugar
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped Granny Smith apples
Instructions:
  • Position the oven rack just below the center level and preheat to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray and leave it aside.
  • In a spacious bowl, blend together flour, cinnamon, baking soda, salt, ginger, and nutmeg until fully combined.
  • In a bowl, use an electric mixer to whip eggs until foamy. Incorporate white and light brown sugars until fully mixed. Then, blend in pumpkin puree, oil, and vanilla until smooth. Combine wet ingredients with dry ingredients until just mixed. Gently fold in chopped apples and transfer mixture to the prepared pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 55 to 65 minutes. Allow to cool in the pan on a wire rack for 15 to 20 minutes, then remove from the pan and cool entirely.
