Apple pumpkin muffins with a delicious streusel topping.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 cups white sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 2 eggs, lightly beaten
  • 1 cup canned pumpkin puree
  • 0.5 cup vegetable oil
  • 2 cups peeled, cored and chopped apple
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 4 teaspoons butter
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then prepare 18 muffin cups by greasing them lightly or using paper liners.
  • Combine 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda, and salt in a large bowl. In another bowl, whisk together eggs, pumpkin, and oil. Gently mix pumpkin mixture into flour mixture until just combined. Gently fold in apples. Spoon batter into muffin cups.
  • Combine 2 tablespoons flour, 1/4 cup sugar, and 1/2 teaspoon cinnamon in a small bowl. Blend in butter until mixture is crumbly. Sprinkle topping over muffin batter evenly.
  • Bake in a warm oven for 35-40 minutes or until a toothpick comes out clean when inserted into a muffin.
