Spiced apple juice and pumpkin butter create a moist and flavorful holiday bread.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 egg
  • 1 cup brown sugar
  • 0.5 cup apple juice
  • 0.25 cup melted butter
  • 1.5 cups pumpkin butter, divided
  • 0.5 cup raisins
  • 0.5 cup toasted chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 3x7-inch loaf pan by greasing and flouring it.
  • Combine the flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves in a bowl, whisking until well mixed; then set aside.
  • In a bowl, beat the egg until smooth. Add brown sugar, apple juice, melted butter, and half of the pumpkin butter, whisking until well combined. Gradually stir in the flour mixture until smooth. Pour half of the batter into the prepared pan, spread the remaining pumpkin butter on top, then pour in the rest of the batter evenly.
  • Place the mixture in the preheated oven on the middle rack and bake until a toothpick inserted into the center comes out clean, which should take 50 to 60 minutes. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
