Pecan and breadcrumb crusted pork chops with homemade pumpkin butter - a delightful twist on a classic dish!
Ingredients:
  • 1 (14 ounce) can pumpkin puree
  • 0.75 cup apple juice
  • 0.75 cup sugar
  • 1 pinch ground cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 cup pecans
  • 0.75 cup bread crumbs
  • 4 (1/2 inch thick) boneless pork chops
  • 0.25 cup oil for frying
Instructions:
  • In a saucepan, combine pumpkin puree, apple juice, sugar, cloves, ginger, and cinnamon. Whisk until smooth, then bring to a boil. Reduce heat and simmer until mixture thickens like applesauce, about 10 minutes.
  • In a food processor, finely chop pecans and bread crumbs. Transfer the mixture to a shallow dish, then coat pork chops by pressing them into the mixture.
  • In a skillet, heat oil over medium-high heat. Cook breaded pork chops until beautifully golden and fully cooked, around 4 minutes on each side. Place on a paper towel-lined plate to absorb excess oil. Serve with a dollop of pumpkin butter for a delightful meal.
