Nut-Crusted Pork Medallions

Southern-style honey pecan cornmeal pork medallions.
Ingredients:
  • 1 egg
  • 1/4 cup honey
  • 3/4 to 1 lb pork tenderloin, cut into 1/2-inch slices
  • 1 cup chopped pecans (4 oz)
  • 1/2 cup yellow cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons vegetable oil
Instructions:
  • Combine the egg and honey in a large bowl, then add the pork slices and toss until coated.
  • Add pecans, cornmeal, salt, and pepper to a food processor. Process until finely chopped. Transfer the pecan mixture into a resealable plastic bag. Add pork slices, seal the bag, and shake to coat evenly.
  • Heat oil in a 10-inch nonstick skillet over medium-high heat. Sear the pork for 6 to 8 minutes, flipping once, until golden brown on the outside and fully cooked in the center.
