Marmalade and nut crusted glazed ham

Indulge in this irresistible glazed ham.
Ingredients:
  • 7-8kg leg or shoulder of ham, on the bone
  • 170g (1/2 cup) orange marmalade
  • 100g (1/2 cup, firmly packed) brown sugar
  • 23.40 gm Dijon mustard
  • 1 x 100g pkt macadamia nuts, coarsely chopped
  • 1 x 100g pkt pine nuts
  • 1 x 100g pkt slivered almonds
Instructions:
  • Preheat your oven to 180°C and adjust the shelf to the lowest position.
  • Using a small sharp knife, cut around the ham shank in a zigzag pattern about 10cm from the end. Carefully slide the knife under the rind, circling the edge of the ham. Lift the rind off in one piece by separating it from the fat with your fingers. Discard the rind.
  • Score the fat of the ham in a diamond pattern using a small sharp knife. Add a touch of water to a roasting pan and place the ham on a wire rack inside.
  • In a small saucepan, gently heat the marmalade, sugar, and mustard until the marmalade is melted. Brush half of the glaze onto the ham to cover it evenly. Bake in the oven for 50-60 minutes until golden brown.
  • Stir macadamia nuts, pine nuts, and almonds into the remaining marmalade glaze until well combined. Spread the marmalade mixture over the ham, pressing the nuts onto the ham. Bake for another 15 minutes until nuts are lightly toasted. Let it rest for 15 minutes before carving.
