Try this irresistible marmalade and citrus glazed chicken - a crowd-pleasing tray bake!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 6 chicken marylands
  • 52.80 gm English breakfast marmalade
  • 62.50 ml fresh citrus juice (see notes)
  • 127.50 gm salt reduced chicken style liquid stock
  • 1 orange, thinly sliced
  • 1/2 lemon, thinly sliced
  • 1/2 lime, thinly sliced
  • Steamed broccolini, to serve
  • Mashed potato, to serve
Instructions:
  • Preheat oven to 200C/180C fan-forced. In a large flameproof roasting pan, heat oil over high heat. Sear chicken for 2 minutes per side until golden. Remove and set aside on a plate.
  • Combine marmalade, citrus juice, and stock in a pan and bring to a boil. Season with salt and pepper. Add chicken back to the pan, coat it, then transfer to the oven. Roast for 15 minutes, then increase the oven temperature. Add citrus slices, baste with pan juices, and roast for an additional 20-25 minutes until chicken is fully cooked.
  • Present the chicken alongside broccolini and creamy mashed potatoes.
