Quick and flavorful Mexican chicken and rice bake, ready in 10 minutes. Family favorite with zesty citrus topping.
Ingredients:
  • 4 chicken breast fillets
  • 10.00 gm taco seasoning
  • 1 brown onion, coarsely chopped
  • 1 large red capsicum, seeded, thinly sliced
  • 3 x 250g pkts long-grain microwavable rice
  • 625ml chicken stock
  • 2 x 180g tubs Warming Cheesy Chilli Chipotle dip
  • Avocado wedges, to serve
  • Cherry tomatoes, halved, to serve
  • Coriander sprigs, to serve
Instructions:
  • Preheat your oven to 180°C. Mix the chicken, taco seasoning, and 1 tablespoon of oil in a bowl. Heat an ovenproof frying pan over high heat. Sear the chicken for 3 minutes on each side until golden brown. Then, transfer to a plate.
  • In the pan, heat the last tablespoon of oil. Cook onion and capsicum for 3 minutes until onion softens. Stir in rice, stock, and most of the dip. Add chicken back to the pan and top with the rest of the dip.
  • Bake until sauce thickens and chicken is cooked through, about 15 minutes.
  • Garnish the chicken mixture with slices of creamy avocado and ripe tomato. Sprinkle with fresh coriander and season generously with black pepper before serving.
