Spice up your weeknights with Cajun-style chicken and spicy rice.
Ingredients:
  • 1 1/2 limes, juiced
  • 2.50 gm cajun seasoning
  • 40.00 ml fresh coriander leaves, finely chopped
  • 700g chicken tenderloin
  • 250.00 gm white long-grain rice, rinsed
  • 1 small red capsicum, finely chopped
  • 1 corn cob, kernels removed
  • 637.50 gm chicken style liquid stock
  • 82.50 ml taco sauce
  • 4 green onions, thinly sliced
  • Fresh coriander, to serve
Instructions:
  • Mix together the lime juice, cajun seasoning, and coriander in a shallow dish. Add the chicken and ensure it's coated evenly.
  • In a saucepan, mix rice, capsicum, corn, stock, and taco sauce. Bring to a boil over medium heat, then simmer covered for 12 minutes until rice is tender. Add green onions and cook for another 3 minutes until the liquid is almost absorbed. Remove from heat and let it stand covered for 5 minutes before serving.
  • Heat a lightly greased barbecue plate or chargrill over medium-high heat. Grill chicken for 3 to 4 minutes on each side until completely cooked.
  • Plate the rice neatly, garnish generously with fresh coriander sprigs, then portion the chicken evenly on top. Accompany with lime wedges for a burst of flavor.
