Authentic Cajun dirty rice recipe bursting with Louisiana flavors. A spicy twist on classic rice pilaf.
Ingredients:
  • 1 1/2 cup long-grain rice (Carolina, basmati, jasmine, etc)
  • 2 cups chicken broth
  • 2 cups water
  • 1/2 pound ground pork
  • 1/2 cup chicken livers
  • 3 slices of bacon, chopped
  • 1/2 onion, chopped
  • 2 celery stalks, chopped
  • 1/2 green bell pepper or 1-3 jalapeños, seeded and chopped
  • 1 tablespoon Cajun seasoning
Instructions:
  • Prepare the rice: Follow the package instructions to cook the rice, incorporating chicken broth for one third of the cooking liquid. For example, if instructed to use 3 cups of water for 1 1/2 cups of rice, use 2 cups of water and 1 cup of chicken broth. Once cooked, let the rice sit for 5 minutes off the heat. Transfer the rice to a sheet pan, drizzle 1 tablespoon of olive oil over it, mix well, and allow it to cool.
  • Mash or purée the chicken livers while the rice cooks. Finely chop or blend in a blender.
  • In a large pan over medium-low heat, crisp up the bacon in 1 tablespoon of oil until it's nice and crunchy.
  • Sear the pork and vegetables: Increase the heat to high and add the ground pork. Let it brown without stirring. When the pork starts to brown, add a final tablespoon of oil, along with celery, bell pepper or jalapeños, and onions. Sauté over medium-high heat until browned. Be mindful of the crust forming at the bottom of the pan and adjust the heat if necessary. Stir in the minced liver and cook for a few more minutes.
  • Pour in the last cup of chicken broth and scrape the pan with a wooden spoon to deglaze.
  • Season the dish with fragrant Cajun seasoning, increase the heat to high to reduce most of the chicken stock, then fold in the cooked rice, ensuring each grain is coated in the flavorful mixture.
