Cajun Style Meatloaf

Spiced meatloaf with Andouille sausage for a crispy finish.
Ingredients:
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon ground white pepper
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground nutmeg
  • 4 tablespoons butter
  • 0.75 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.25 cup chopped green onions
  • 4 cloves garlic, minced
  • 1 tablespoon hot pepper sauce
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup evaporated milk
  • 0.5 cup ketchup
  • 1.5 pounds ground beef
  • 0.5 pound andouille sausage, casings removed
  • 2 eggs, beaten
  • 1 cup dried bread crumbs
Instructions:
  • Mix bay leaves, salt, cayenne pepper, black pepper, white pepper, cumin, and nutmeg in a small bowl; set aside.
  • In a saucepan over medium heat, melt the butter or margarine. Sauté onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix until it sticks to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; cook for an additional 2 minutes, stirring occasionally.
  • Once the vegetable mixture has cooled to room temperature, combine it with the beef, sausage, eggs, bread crumbs, and remove the bay leaves. Mix thoroughly by hand and shape into a loaf that is approximately 1 1/2 inches high in a 9x13 inch baking dish.
  • Start by baking at 350 degrees F (175 degrees C) for 25 minutes, then increase to 400 degrees F (200 degrees C) and bake for an additional 35 minutes. Allow to cool for 5 minutes before serving.
