Spicy kidney bean and rice soup with ham, andouille sausage, white rice, and green onions.
Ingredients:
  • 1 tablespoon olive oil
  • 8 ounces bacon, cooked and cubed
  • 1.5 cups chopped onion
  • 0.25 cup chopped green bell pepper
  • 1 tablespoon minced garlic
  • 4 bay leaves
  • 6 ounces sliced andouille sausage
  • 1 small smoked ham hock
  • 2 cups dry kidney beans, soaked overnight
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Worcestershire sauce
  • 8 cups chicken broth
  • 1 teaspoon salt
  • 1.5 cups cooked rice
  • 6 tablespoons thinly sliced green onion
Instructions:
  • In a large pot over high heat, heat oil. Sauté bacon for 2 minutes, then add onions, bell pepper, garlic, bay leaves, sausage, and ham hock, and sauté for an additional 2 minutes.
  • After sautéing the beans for 2 minutes, introduce a burst of flavor by stirring in Cajun-style seasoning, Worcestershire sauce, and stock. Allow the mixture to reach a gentle boil, then lower the heat and let it simmer for 1 hour, remembering to stir occasionally.
  • Sprinkle salt into the pot, cover, and let it simmer for another 15 minutes. Remove from heat and let it sit covered for approximately 20 minutes. Remove and discard the ham hock.
  • Serve the soup in bowls and garnish each with 1/4 cup of rice and a sprinkle of green onion.
