Blackened Cajun red snapper fillets: A spicy, buttery delight.
Ingredients:
  • 2 tablespoons paprika
  • 1 tablespoon salt
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons cayenne pepper
  • 1.5 teaspoons ground white pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 (6 ounce) fillets red snapper
  • 1.5 cups butter, melted
Instructions:
  • Combine paprika, salt, onion powder, garlic powder, cayenne pepper, white pepper, black pepper, thyme, and oregano in a small bowl and mix well.
  • Preheat a large cast iron skillet over high heat for about 10 minutes until extremely hot.
  • Coat fish fillets in rich melted butter, then generously sprinkle with flavorful seasoning mixture.
  • Sear fish fillets in a hot skillet with 1 tablespoon of butter poured over each. Cook until underside is blackened, 3 to 5 minutes. Flip fillets, add another tablespoon of butter to each, and cook until flaky, about 2 more minutes.
