Create flavorful Cajun-style fish with minimal ingredients.
Ingredients:
  • 4 x 180g blue-eye fillets, skin removed
  • 30g unsalted butter, melted
  • 40.00 ml Cajun spice mix
  • 800g kumara, cut into chips
  • 7.50 gm caster sugar
  • Aioli, to serve
  • Fresh coriander, to serve
Instructions:
  • Coat the fish in butter, generously season it, and sprinkle with Cajun spice mix. Allow it to marinate for 30 minutes.
  • Preheat the oven to 220C. Drizzle chips with 1/4 cup (60ml) oil, sprinkle with sugar, and season with salt. Place on a rack over a baking tray and bake for 25 minutes, turning halfway through, until crisp.
  • Heat 1 tablespoon of oil in a frypan over medium-high heat. Cook the fish, turning occasionally, for 6-8 minutes or until cooked through. Serve the fish with chips, aioli, fresh coriander, and lemon wedges on the side.
