Grilled Blackened Fish Sandwiches with Homemade Slaw

Blackened grilled cod fillet served on buns with homemade slaw for a delicious summery dish.
Ingredients:
  • 1 (14 ounce) package coleslaw mix
  • 0.5 small red onion, chopped
  • 0.25 cup apple cider vinegar
  • 0.25 cup olive oil
  • 2 tablespoons Creole mustard
  • 0.5 teaspoon white sugar
  • 0.25 teaspoon celery seed
  • 2 pounds cod fillets
  • 2 tablespoons blackening seasoning
  • 2 teaspoons paprika
  • 1 tablespoon olive oil
  • 8 hamburger buns
Instructions:
  • In a large bowl, mix together coleslaw mix, onion, vinegar, oil, mustard, sugar, celery seed, salt, and pepper until well combined. Let sit.
  • Place the cod fillets on a tidy work surface. Sprinkle half of the blackening seasoning and paprika on the fillets. Turn them over and sprinkle the remaining blackening seasoning and paprika. Gently brush both sides of the fillets with olive oil.
  • Preheat your outdoor grill until it's sizzling hot and brush the grate with a light coat of oil. Grill the fish for 3 minutes on one side. Flip and grill for another 3 minutes.
  • Cut the fillets in half, then layer each half on a burger bun and garnish with the reserved slaw.
