Cajun Ponchartrain Sauce

Indulge in a velvety Ponchartrain sauce with shrimp and mushrooms, perfect for drizzling over grilled, blackened, or pan-fried fish. Ideal for a romantic dinner for two.
Ingredients:
  • 0.25 cup butter
  • 8 fresh mushrooms, sliced
  • 8 medium shrimp - peeled and deveined
  • 0.25 cup whipping cream
  • garlic powder to taste
  • black pepper to taste
  • 2 teaspoons Madeira wine
Instructions:
  • Saute mushrooms in a touch of butter until tender in a medium saucepan. Add shrimp and cook until pink. Transfer to a bowl.
  • Once the shrimp and mushroom mixture is ready, melt the remaining butter in the same saucepan, then gently incorporate the cream. Add garlic powder and black pepper to taste as you stir in the mixture. Allow it to simmer over low heat until it thickens. Right before serving, stir in the Madeira wine.
