Oven-baked blackened blue-eye with mango and watermelon salsa

Quickly prepare flavorful blackened fish with vibrant mango and watermelon salsa for a delicious dinner in under an hour.
Ingredients:
  • 1 1/2 tsp garlic powder
  • 15.00 gm smoked paprika
  • 1 tsp dried thyme
  • 15.00 gm ground cumin
  • 1 1/2 tsp chilli powder
  • 2.40 gm sea salt flakes
  • 8 skinless boneless blue-eye fillets
  • 2 limes, sliced, plus extra wedges to serve
  • 400.00 gm long-grain white rice
  • 2 green onions, thinly sliced diagonally
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 62.50 ml chopped fresh coriander leaves, plus extra sprigs to serve
  • 2 mangoes, diced
  • 1/4 small seedless watermelon, peeled, diced
  • 1 red onion, finely chopped
  • 65.63 gm lime juice
  • 36.40 gm extra virgin olive oil
  • 40.00 ml chopped fresh mint
Instructions:
  • Heat your oven to 200C/180C fan-forced and line a large roasting pan with baking paper.
  • Prepare flavorful herbed rice by combining rice and 4 cups of water in a large saucepan over high heat. Bring to a boil, then gently fluff the rice with a fork. Cover, lower the heat, and simmer for 12 to 15 minutes until tender and the liquid is absorbed. Remove from heat, let it stand for 5 minutes, then fluff again with a fork before serving.
  • Mix garlic powder, paprika, thyme, cumin, chilli, and salt in a bowl. Coat the fish with the spice mixture. Transfer the fish to the baking pan. Drizzle with oil and place lime slices on top. Season with pepper. Roast for 20 minutes until cooked through.
  • In a bowl, toss together fresh mango, juicy watermelon, zesty red onion, tangy lime juice, a drizzle of oil, and fragrant mint to create a delightful mango and watermelon salsa.
  • Combine green onion, parsley, and coriander with the rice and mix well. Serve the fish with the rice, salsa, and additional lime and coriander on the side.
