Ingredients:
  • 117.98 gm honey
  • 20.00 ml finely grated orange rind
  • 86.63 gm orange juice
  • 200.00 gm traditional rolled oats
  • 125.00 ml bran cereal
  • 32.50 gm shredded coconut
  • 125.00 ml pumpkin seeds (pepitas)
  • 125.00 ml sunflower seeds
  • 37.50 gm sesame seeds
  • 85.00 gm sultanas
  • 62.50 ml chopped dried apricots
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and line a large, shallow baking dish with baking paper. In a saucepan over medium-low heat, combine honey, orange rind, and orange juice. Stir and cook for 2 to 3 minutes until the honey melts.
  • In a large bowl, mix together oats, cereal, coconut, pumpkin seeds, sunflower seeds, and sesame seeds. Pour in the honey mixture and stir well to coat. Transfer the mixture to the prepared dish.
  • Bake until golden and crisp for 20 to 25 minutes. Allow to cool on the tray before mixing in the sultanas and apricots. Stir well to combine, then store in an airtight container for up to 2 weeks.
