Easy and delicious oven-baked pork chops over rice, perfect for a family dinner.
Ingredients:
  • 1 teaspoon olive oil, or as needed
  • 6 (1-inch thick) pork chops
  • 1.5 cups uncooked long-grain rice
  • 2 stalks celery, sliced
  • 1 medium onion, sliced
  • 3 cups water
  • 4 teaspoons instant chicken bouillon
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 1 medium green bell pepper, cut into 6 rings
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, sear pork chops in olive oil until both sides are golden brown, approximately 5 minutes.
  • Combine rice and celery in a baking dish. Layer onion slices over the rice, then add browned pork chops on top.
  • In a saucepan, bring water to a vigorous boil. Stir in bouillon, Italian seasoning, and salt until fully dissolved. Pour this flavorful mixture over the pork chops and cover with aluminum foil.
  • Bake in the preheated oven for 60-70 minutes until the rice is cooked and the pork chops are fork-tender. Remove the aluminum foil and add sliced bell peppers on top. Bake for an additional 10-15 minutes until the peppers are tender.
