New Orleans-Style Red Beans

Slow cook New Orleans-style spicy red beans for a delicious side dish.
Ingredients:
  • 1/4 cup sliced celery
  • 2 cans (15 1/2 ounces each) red kidney beans, drained
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 can (8 ounces) tomato sauce
  • Red pepper sauce, if desired
Instructions:
  • In a 3 1/2 to 4-quart slow cooker, nestle in the celery and layer the rest of the ingredients (excluding the pepper sauce) on top.
  • Cook on low heat for 4 to 6 hours until perfect consistency. Serve with a side of pepper sauce.
