Savory New Orleans-style seasoned peas with bacon, ham, onions, and peppers, served on a bed of fluffy rice.
Ingredients:
  • 4 slices bacon
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 1 (16 ounce) package frozen crowder peas
  • 2 cups water
  • 1 tablespoon garlic powder
  • 1 pinch dried thyme
  • 1 crushed bay leaf
  • 0.5 teaspoon seasoned salt to taste
  • 2 slices cooked ham, cubed
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Cook bacon in a skillet until crisp. Remove, crumble, and set aside. Add onion and green bell pepper to the same skillet, cook until soft. Stir in peas, water, garlic powder, thyme, bay leaf, and seasoned salt. Simmer for 30-40 minutes until peas are tender.
  • Incorporate the ham into the skillet, season to taste, and cook for 5 minutes. Finish by stirring in fresh parsley right before serving.
