Golden, crispy buttermilk fried chicken with a spicy marinade.
Ingredients:
  • 2 cups buttermilk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 whole chicken, cut into pieces
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 5 cups vegetable oil for frying
Instructions:
  • Combine the buttermilk, mustard, salt, pepper, and cayenne in a bowl and whisk until smooth.
  • Transfer the buttermilk marinade to a sealed bag, then add chicken, making sure to coat everything well. Remove any excess air before sealing the bag. Let it marinate in the fridge for 2 to 8 hours.
  • In a resealable plastic bag, mix flour, baking powder, garlic powder, and onion powder thoroughly by giving it a good shake.
  • Transfer each marinated chicken piece to the dry ingredient bag, seal the bag, and shake well to coat. Repeat the process by dipping the coated chicken in buttermilk marinade and shaking in the dry coating again. Heat oil in a large frying pan over medium-high heat and place coated chicken on the pan.
  • Cook chicken in hot oil in batches until beautifully golden brown, turning occasionally, and until juices run clear. Ensure the internal temperature reaches at least 165 degrees F (74 degrees C) when checked with an instant-read thermometer.
