Southern-style cornbread, ideal for BBQ or Creole fish.
Ingredients:
  • 4 corn cobs, husks and silk removed
  • 9.20 gm extra virgin olive oil
  • 4 middle bacon rashers, trimmed, chopped
  • 1 brown onion, halved, thinly sliced
  • 1 green capsicum, finely chopped
  • 1 celery stalk, trimmed, finely chopped
  • 83.33 gm thickened cream
  • 1 green onion, sliced diagonally
Instructions:
  • Carefully slice kernels off the cobs by using a knife (refer to notes).
  • In a large saucepan over medium-high heat, heat oil and add bacon. Cook until crisp, about 3 minutes. Then add brown onion, capsicum, and celery, and cook until softened, about 5 minutes.
  • Combine corn and 2 tablespoons of water in a pan and cook for 5 minutes until corn is tender. Stir in cream and season with salt and pepper. Serve topped with green onion.
