Spicy chorizo and Cajun chicken add a Southern flair to this delicious winter soup.
Ingredients:
  • 9.20 gm vegetable oil
  • 130g chorizo
  • 1 brown onion, thinly sliced
  • 2 celery sticks, thinly sliced
  • 5.00 gm Cajun seasoning
  • 1.5l chicken
  • 2 RSPCA Approved Chicken Breast Fillets, halved horizontally
  • 400g can diced tomatoes
  • 400g can chickpeas, rinsed, drained
  • 125.00 ml flat-leaf parsley, coarsely chopped
Instructions:
  • In a large saucepan over medium heat, heat oil until shimmering. Add chorizo and onion, cook while stirring for 3 mins until lightly browned. Stir in celery, Cajun seasoning, and garlic, continue cooking for 1 min until fragrant.
  • Combine the stock, chicken, tomato, and chickpeas in a pot and bring to a boil. Once boiling, reduce the heat and simmer uncovered for 5 minutes or until the chicken is cooked through. Transfer the chicken to a cutting board. Continue to simmer the soup uncovered for another 15 minutes.
  • Shred the chicken using two forks, then cover to keep warm.
  • Just before serving, add the chicken back to the soup and sprinkle with parsley before serving.
