Southern-style chicken fried steak: Crispy breaded cube steaks smothered in creamy gravy. A guaranteed crowd-pleaser!
Ingredients:
  • 4 (1/2 pound) beef cube steaks
  • 2.25 cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon black pepper
  • 0.75 teaspoon salt
  • 1.5 cups buttermilk
  • 1 tablespoon hot pepper sauce (e.g. Tabasco™)
  • 1 large egg
  • 2 cloves garlic, minced
  • 3 cups vegetable shortening for frying
  • 4 cups milk
  • kosher salt and ground black pepper to taste
Instructions:
  • Place the steaks between two sheets of plastic wrap and gently pound them until they are 1/4 inch thick.
  • Spread 2 cups of flour in a shallow bowl.
  • In a second shallow bowl, combine baking powder, baking soda, 1 teaspoon pepper, and 3/4 teaspoon salt. Add buttermilk, Tabasco sauce, egg, and garlic; mix well.
  • In a deep cast-iron skillet, warm up the shortening until it reaches 325 degrees F (165 degrees C. Set up a wire rack on top of a sheet of parchment paper.
  • Coat the steak in flour, dip in buttermilk batter, press in flour again, and place on a wire rack. Repeat with the remaining steaks.
  • Sear steaks in batches, if needed, until perfectly golden brown on both sides, 3 to 5 minutes per side. Transfer steaks to a paper towel-lined plate to drain, then cover with foil to keep warm as you prepare the gravy.
  • Reserve 1/4 cup of the flavorful liquid along with any tasty bits, discarding the excess fat.
  • Return skillet to medium-low heat and add the reserved oil. Whisk in remaining 1/4 cup flour, then use a spatula to scrape up the flavorful bits from the bottom of the pan and incorporate them into the gravy.
  • Pour in the milk, turn up to medium heat, and let the gravy simmer. Stir frequently until thickened, about 6 to 7 minutes. Season with kosher salt and pepper to taste.
  • Place the steaks on a serving platter and generously drizzle them with the savory gravy.
