Marinate and sear chicken for delicious fajitas with colorful peppers and onions.
Ingredients:
  • 1/3 cup sour cream
  • For the chicken:
  • 1 1/4 to 1 1/2 pounds skinless, boneless chicken breasts
  • 1/2 teaspoon salt
  • 2 tablespoons canola oil
  • 1 large onion
  • 3 bell peppers
  • For the marinade:
  • 2 tablespoons lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 garlic clove
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 jalapeño
  • 1/4 cup chopped cilantro
  • For serving:
  • 8 to 12 flour tortillas
  • 1/2 cup salsa
  • 1 avocado
  • 1 cup iceberg lettuce
Instructions:
  • Slice thick chicken breasts in half horizontally, aiming for a center thickness of around 1/2-inch to 3/4-inch.
  • Prepare the chicken marinade by combining all ingredients in a glass or plastic container. Mix in the chicken, ensuring it is well coated. Cover and marinate at room temperature for 30 minutes or refrigerate for up to 8 hours.
  • Remove the chicken from the marinade and pat dry, then season with a hint of salt.
  • Sear the chicken in hot oil: Heat a tablespoon of oil in a large cast iron frying pan over high heat until the oil starts to smoke. Add chicken breast pieces in a single layer and cook for 2 to 3 minutes until well seared. Flip and cook the other side for another 2 to 3 minutes until fully seared. You may need to work in batches depending on pan size and chicken pieces.
  • Stack the seared chicken breasts and cover them with foil to rest for 5 minutes. Test for doneness by cutting into one piece with a sharp knife - it should be just done. If needed, return to the hot pan for a minute or two. This will help the chicken retain heat while you cook the peppers and onions.
  • Sauté the peppers and onions until nicely seared: In a hot frying pan with a tablespoon of oil, cook the onions and peppers for 2 minutes without stirring. Let them sear and develop some blackening. Stir and cook for another 2 minutes until well browned.
