Flavorful chicken soup with aromatic spices, hearty pasta, and tender chicken cooked in beef bouillon, dried herbs, and veggies.
Ingredients:
  • 1 (2 to 3 pound) whole chicken
  • 10 cups water, or as needed to cover
  • 3 stalks celery with leaves, chopped
  • 1 pound baby carrots
  • 2 onions, chopped
  • 2 (14.5 ounce) cans low-sodium chicken broth
  • 2 cubes beef bouillon, crumbled
  • 1 packet chicken noodle soup mix
  • 5 black peppercorns
  • 2 bay leaves
  • 1 pinch dried thyme
  • 1 pinch poultry seasoning
  • 1 pinch dried basil
  • 1 pinch dried parsley
  • 1 (8 ounce) package farfalle (bow tie) pasta
Instructions:
  • In a large pot, submerge the chicken in water and add celery leaves. Bring to a boil, then simmer gently for 30 to 40 minutes until the chicken is fully cooked. Transfer the cooked chicken to a bowl and allow it to cool slightly before handling.
  • Strain the cooking liquid, removing celery leaves, then pour it back into the pot. Add carrots, onion, celery stalks, chicken broth, bouillon, and soup mix. Simmer over medium heat and stir in peppercorns, bay leaves, thyme, poultry seasoning, basil, and parsley.
  • Debone the chicken and chop it into bite-sized pieces. Add it to the pot and simmer until vegetables are tender and flavors are well combined, approximately 90 minutes.
  • Add the pasta and cook until al dente, about 10 to 15 minutes. Serve piping hot.
