Create crispy, flavor-packed chicken using easy seasoning in a shake-and-bake method for a delicious Friday night meal.
Ingredients:
  • vegetable oil, lard or a mixture of both
  • 1 large free-range chicken jointed into 8 (ask your butcher to do it)
  • plain flour
  • cayenne pepper
Instructions:
  • Heat a large, deep cast-iron frying pan with enough fats to fill one-third of the pan until a haze rises or a bread cube browns in under a minute. Place flour in a brown paper bag (preferably from Wholefoods), season with salt, cayenne, and black pepper, then shake chicken parts in the bag until coated. Fry chicken in batches in the hot oil, starting with dark meat skin-side down, until golden, cooked through, juicy, and crispy. Drain on paper towels and serve warm or at room temperature.
