Crispy zucchini fritters with a flavorful batter of eggs, flour, milk, cheese, garlic, and onion, fried until golden in shortening.
Ingredients:
  • 2 cups all-purpose flour
  • 1 large zucchini, finely chopped
  • 1 small onion, chopped
  • 1 cup 2% milk
  • 3 eggs, beaten
  • 0.5 cup freshly grated Romano cheese
  • garlic powder to taste
  • onion powder to taste
  • salt and pepper to taste
  • 1 pinch dried parsley
  • 0.25 cup vegetable shortening
Instructions:
  • Combine flour, zucchini, onion, milk, beaten eggs, and Romano cheese in a large bowl. Season with garlic powder, onion powder, salt, pepper, and parsley. Stir until mixture is thoroughly combined.
  • In a large skillet over medium heat, melt 1 tablespoon of shortening. Spoon 1/4 cup of batter at a time onto the skillet, flatten slightly with a spatula, and cook until centers are dry. Flip and cook until golden brown. Keep warm on a plate. Add more shortening to the skillet as necessary.
