Freezable zucchini and chorizo slice recipe

Prepare and freeze this convenient make-ahead meal for quick and easy weeknight dinners. Reheat in the oven as needed.
Ingredients:
  • 2 chorizo sausages, finely chopped
  • 1 red capsicum, seeded, chopped
  • 1 brown onion, finely chopped
  • 2 zucchini, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 120g pea
  • 150g self-raising flour
  • 90g cheddar cheese
  • 4 Free Range Eggs
  • 60ml milk
  • 40g butter, melted
  • Salad, to serve
Instructions:
  • Preheat your oven to 180°C. Line a 20cm x 30cm lamington pan with baking paper, leaving some excess hanging over the sides.
  • Heat a large frying pan over high heat. Cook the chorizo, stirring, for 5 mins until golden brown. Transfer to a large heatproof bowl using a slotted spoon.
  • Sauté the capsicum and onion in the pan for 5 minutes until the onion softens. Allow to cool slightly before using.
  • Combine the onion mixture with the chorizo, zucchini, carrot, peas, flour, and ½ cup (60g) cheddar. Stir gently to mix well. In a separate bowl, whisk together the eggs, milk, and butter. Combine this mixture with the chorizo mixture and season to taste. Pour the mixture into the lined pan and sprinkle with the remaining cheddar.
  • Bake for 40 minutes or until golden brown and firm to the touch. Enjoy with a side of fresh salad.
