Freezable zucchini slice

Individually wrap slices, then freeze in airtight container for 3 months.
Ingredients:
  • 4 bacon rashers, finely chopped
  • 1 brown onion, finely chopped
  • 2 zucchinis, coarsely grated
  • 250.00 ml pumpkin, coarsely grated
  • 500.00 ml frozen mixed vegetables, just thawed
  • 120g cheddar cheese
  • 150g self-raising flour
  • 125.00 ml flat-leaf parsley, coarsely chopped
  • 4 Free Range Eggs, lightly whisked
  • 60ml milk
  • 36.40 gm olive oil
  • Mixed salad leaves, to serve (optional)
Instructions:
  • Preheat the oven to 180C and prepare a 20cm x 30cm lamington pan by greasing it and lining the base and 2 long sides with baking paper.
  • In a medium frying pan over medium heat, sizzle the bacon and onion together until the onion softens, about 5 minutes. Move to a bowl.
  • Combine zucchini, pumpkin, mixed vegetables, cheddar, flour, and parsley with the bacon mixture. Stir in egg, milk, and oil. Season to taste. Spoon mixture into the prepared pan and smooth the top.
  • Bake for 40 minutes or until the top is firm. Allow it to cool. Slice and enjoy with fresh salad leaves.
