Freezable, convenient cookies for snacking on the run.
Ingredients:
  • 107.50 gm caster sugar
  • 90.00 gm brown sugar
  • 1 egg
  • 500.00 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 190.00 gm milk chocolate bits
Instructions:
  • Preheat your oven to 180ºC (160ºC fan-forced) and prepare 3 baking trays by lining them with baking paper.
  • In a bowl, use an electric mixer to whisk together butter, sugars, and vanilla until fluffy. Add the egg and beat until mixed. Gradually sift flour and bicarbonate of soda over the mixture and stir until combined. Finally, fold in chocolate bits.
  • Roll mixture into 36 balls using floured hands. Arrange on trays, spacing 3cm apart. Gently flatten. Bake one tray at a time for 12-15 minutes until golden and firm to touch. Let cool on trays for 5 minutes, then transfer to wire rack to cool completely. Serve.
