Irresistible choc-chip vanilla cupcakes for the perfect lunchbox treat!
Ingredients:
  • 225.00 gm self-raising flour
  • 125g butter, softened
  • 161.25 gm caster sugar
  • 3 eggs
  • 64.38 gm milk
  • 4.40 gm vanilla extract
  • 142.50 gm Dark Choc Bits
  • 100g butter, softened
  • 187.50 gm icing sugar mixture
  • 41.20 gm milk
  • 10.00 gm cocoa powder, sifted
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, and line a 12-hole muffin pan with 1/3 cup paper cases.
  • In a bowl, gently sift the flour. Then, add in butter, sugar, eggs, milk, and vanilla extract. With an electric mixer on low speed, mix the ingredients for 1 minute until fully combined. Increase speed to medium and beat for 2 minutes until the mixture is pale and smooth. Gently fold in the choc-chips, then spoon the batter into the prepared muffin tin.
  • Bake for 25 minutes or until golden and a skewer inserted in the center of 1 cupcake comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool.
  • Prepare the icing by using an electric mixer to whip the butter until it turns pale. Gradually add the icing sugar and milk, continuing to beat until well combined. If needed, incorporate more milk until desired consistency is achieved. Separate the mixture into two bowls and mix cocoa into one of the bowls until fully incorporated.
  • Frost half of the cupcakes with indulgent chocolate icing, and the rest with luscious white icing. Serve and enjoy!
