Delicious mini choc-chip cupcakes, great for parties or a sweet snack!
Ingredients:
  • 300g (2 cups) self-raising flour
  • 155g (3/4 cup) caster sugar
  • 1 x 250g pkt milk choc bits
  • 60ml (1/4 cup) milk
  • 125g butter, melted
  • 2 eggs, lightly whisked
  • 4.40 gm vanilla essence
  • 1 x 453g ctn vanilla frosting
  • 130g (1 1/2 cups) desiccated coconut
  • 12-14 drops blue food colouring
Instructions:
  • Preheat the oven to 180°C. Line thirty-six mini muffin pans with paper cases. The pans should each have a 30ml (1 1/2-tablespoons) capacity.
  • In a large bowl, mix flour, sugar, and chocolate chips. In a separate large jug, combine milk, butter, egg, and vanilla extract. Add the egg mixture to the flour mixture and gently stir until just combined.
  • Divide the mixture evenly into the muffin pans. Bake in the oven for 12-15 minutes until a skewer comes out clean. Let cool on a wire rack for 2-3 minutes, then transfer to cool completely for 1 hour.
  • Evenly frost the cupcakes. Place coconut in a plastic bag, add food coloring, and shake until well colored. Sprinkle coconut over the cupcakes before serving.
