Indulgent yet healthy 4-ingredient biscuits for a delightful snack with your coffee or tea.
Ingredients:
  • 200g light cream cheese, at room temperature
  • 30.00 gm caster sugar
  • 1 x 425g can apricot halves in natural juice, drained, reserving 2 tsp juice
  • 12 choc-chip & apricot cookies
Instructions:
  • In a medium bowl, mix the cream cheese, sugar, and reserved apricot juice until smooth. Chill in the fridge for 15 minutes.
  • Place three delicious cookies on each individual serving plate. Add a generous dollop of creamy cream cheese mixture and a juicy apricot half on top of each cookie. Serve promptly for the ultimate enjoyment.
